Pasteurization Process for Seal Top Containers

A Load seamed plastic containers into retort basket (metal ends down)

B Place a 1/4 " Thick non flexible aluminum plate with 1" diameter holes on 2 1/4" centers between each layer of containers

C On the top layer of containers place another similar plate and secure the top plate to the bottom of the retort basket with 5 rubber straps with "s" hooks at either end. Length of straps to be determined by the number of layers of containers cooked at one time.

D Bring water temperature in the cook tank to 181 F ( 82.8 C) and then place the product filled retort basket into the tank. When the water temperature returns to 181 F start the cooking schedule. Cooking times: 6 oz- 90 minutes, 8 oz - 130 minutes, 16 oz -160 minutes.

E At the conclusion of the cook raise the retort basket from the cook tank and place in the ice water cooling tank (Approx 32F, for approximately 100/120 minutes or until internal product temperature reaches 40 F.

F Empty the retort basket and place the chilled product into the cooler. Our customers advise their product is expected to have a shelf life of 12 months if temperature of 32 - 36 F 0-1.7 C is continuously maintained.
